Research over the last 35 years has demonstrated that mindfulness promotes wellbeing and learning while reducing distress.

Here are a few of the best books on mindfulness:

Mindfulness: An Eight-Week Plan for Finding Peace in a Frantic World
by Mark Williams and Danny Penman  

Possibly the best book for starting mindfulness practice.  It includes descriptions of practices, relevant and straightforward information from theory and research, and an eight-week program to help introduce and increase mindfulness in your life.  

Full Catastrophe Living
by Jon Kabat-Zinn 

Jon Kabat-Zinn pioneered mindfulness in medicine with Mindfulness-Based Stress Reduction (MBSR).  This book describes the MBSR program and many of the benefits of mindfulness in medicine.

The Joy of Half a Cookie
by Jean Kristeller and Alisa Bowman

Mindfulness of eating is a great way to increase enjoyment of food and decrease overeating and other problems associated with food.  Kristeller is one of the leading researchers in mindfulness of eating.

Handbook of Mindfulness

Brown, Creswell, and Ryan, editors

This book includes research articles on many aspects of mindfulness
